Getting Unstuck.

Since I had Emma, I gained enough weight to be “obese”. After working out like crazy, counting calories and even going vegan for a bit, I graduated to the “overweight” club. After a year, nothing changed. In fact, my weight was creeping back up and my blood pressure was crazy high even on medication. I gave up trying anymore. I thought this was my new reality.

As a last ditch effort, I went to see a doctor who specialized in tough cases…

He diagnosed me with PCOS. Another issue to tackle! He recommended I start a Keto style of eating and gave me a shopping list and eating plan to get started. That was around Dec. 15, 2016.

Lost 28 lbs within 8 weeks.

Plus my blood pressure went from stroke-level high to normal - no more meds!

What is a Keto style of eating? 

Keto is short for Ketogenic. The plan is high on healthy fats, low carb and moderate protein. By eating higher fats, you switch your body from burning carbs & sugar for energy to burning fat 24/7. This fat burning state is called “ketosis”. There are lots of healthy benefits on top of losing weight. The first week was a little hard for me to adjust, but after that I had a lot more energy than before I started.

The Trim Heathy Mama Cookbook has been a lifesaver! This is my go-to resource for all kinds of meals and (most importantly) dessert.  99% of the “S” (Satisfying) meals are keto-friendly.
